There’s a lot more to roast profiling than light, dark, and medium. The exact temperature you use, when you decrease or increase the heat, how long you hold the temperature at that level for… it all affects the final flavour of the coffee.
And it’s up to the roaster to develop the best profile, and then replicate it every single time.
